Bevier Café is more than just a great place to eat.
Staffed and managed by Food Science and Human Nutrition students, Bevier Café is also a real-life classroom laboratory. The Quantity Food Preparation and Service course (FSHN340) is the "boot camp" for both our dietetics and hospitality management programs. Course requirements include two hours of classroom lecture/discussion and ten hours of laboratory work each week for a fifteen-week period.
Staffing and managing Bevier Café offers students the opportunity to study and experience the problems and issues related to managing a quantity food service operations. Situations concerning production, service, and financial control are addressed.
